Edamame white bean salad

🥫 Ingredients

Salad

  • 1 can of Great Northern Beans, or other equivalent white bean
  • 1 bag of edamame beans, thawed if frozen
  • 6-8 Persian cucumbers
  • 1/4-1/2 of a red onion
  • 1/2 of a green cabbage, chopped
  • 1 bunch of cilantro
  • 2-4 green onions
  • 2 jalapenos
  • (optional) Sesame seeds

Dressing

  • 1/4 cup sesame oil
  • 1/4 cup rice vinegar
  • 2 tbsp soy sauce
  • 2 tbsp miso
  • 1 tbsp grated ginger
  • 1 tbsp grated garlic
  • Juice of 1 lime

🔪 Instructions

  1. Rinse and drain the white beans and edamame. In a large bowl, combine with the cucumbers, red onion, green cabbage, cilantro, green onions, jalapenos, and sesame seeds.
  2. In a mason jar or other small container, combine the sesame oil, rice vinegar, miso paste, ginger, garlic, and lime juice.
  3. Pour dressing over the salad and toss thoroughly until mixed, and enjoy! The dressing will marinade the salad and become more flavorful throughout the week.
